Curried carrot soup for a rainy day

Such an easy recipe, makes me want to puree everything into soup! And the curry goes so well with carrots. Onions and potatoes were also added. Makes you all warm inside during the dreary winter season.

Curried Carrot Soup (makes a little less than 4 servings)
1.5 large carrots
one potato
one large onion
Oil to stir fry
About 2 cups of whichever stock you like
1/2 tbsp of curry powder (add more if you like spicy)
Dash of salt and pepper
A blender

Everything is chopped and diced. The smaller they are, the faster and easier they cook. Fry up onions in a pot until they're soft and it smells good. Add the carrots, potatoes and chicken stock. Boil on low heat for 20 minutes or until everything is soft and mushy. Check the amount of stock every so often since it evaporates as it keeps boiling. Cool down and then puree it with a blender. Serve.
