Cold TOFU Noodles

Before the summer ends, I figured I'll learn to make some cold noodles. A really simple recipe in making the broth - a bit tangy and sweet. It's formally called Hiyashi Chuka Noodles originated from Japan. I did not have cucumbers on hand so for color I sprinkled some chives (but will never do that again).
The other day at HK Supermarket, they were giving out samples of tofu shirataki noodles. The texture was very unique, and rubbery similar to the chinese jellyfish dishes. I purchased a bag and used it for this dish.
