Just to put it out there, I'm not a fan of cheesecake. (gasp)
But I was proud of my sister when she successfully made her first cheesecake.
From Judy Williams Fun with Cooking:
Serves 8-10
3/4 cup butter
8 oz whole wheat cookies crumbled (she used graham crackers)
rind and juice of 1 lemon
1 envelope gelatin
1 cup plain cottage cheese
scant 1 cup soft cream cheese
15 oz can condensed milk
(fruit was also included but we did not have strawberries nor raspberries)
*a cake pan is needed to make this
1. Melt butter and combined crumbled cookies. Stir until they're mixed.
2. Spread the cookie mix onto a cake pan and then put it in the fridge while your making the filling.
3. Put lemon rind and juice in a small bowl and sprinkle the gelatin over. Place the bowl in a saucepan of water and heat gently until it's dissolved. Let it cool.
4. Put cottage cheese in a food processor for 20 sec. then add cream cheese and condensed milk. Further process the mixture. Then pour the gelatin mixture and process one more time.
5. Pour the mixture on top of the base and let it refrigerate overnight.
She was short on the graham crackers so the crust didn't come out that well. But besides that I liked it. The past cheesecakes I've tried were too creamy or heavy for me. But this was not heavy and moderately sweet to fit my taste.

I love cheesecake, but I agree, it can get really thick and sickening after a while. I suggest Japanese cheesecake then, since it is NOTHING like the NY cheesecake. XD It's fluffy.
And it has something other cheesecakes don't have - your sister's love =)
